Cream of Carrot Soup
A blendable recipe from our Bon Appétit series, created in partnership with Fresubin®
Ingredients
200ml Fresubin® 2kcal DRINK Fibre Neutral
200g carrots finely grated (3 medium sized)
2 tablespoons of chopped onion
1 tablespoon sunflower oil
100ml meat stock
2 tablespoons thickened cream
2 tablespoons plain flour
20g butter
Salt, pepper, fresh herbs (chopped) to garnish
Method
Prepare and measure out ingredients as listed above.
Cut onions into small cubes and fry for a short time in oil. Add finely grated carrots and meat stock, and cook until soft. Reduce heat to low and gradually add Fresubin 2kcal DRINK Fibre Neutral and cream.
Make a roux with butter and flour and add to soup to thicken.
Season to taste and add herbs as garnish.
Pour soup into a blender, then blend until smooth and fully combined.
Add extra water if a thinner consistency is desired.
