Mushroom Soup

A blendable recipe from our Bon Appétit series, created in partnership with Fresubin®

Ingredients

200ml Fresubin® 2kcal Fibre DRINK Neutral

80g mushrooms, fresh or tinned

2 tablespoons of chopped onion

1 tablespoon sunflower oil

150ml full cream milk

100ml meat stock

20g wheat flour

20g butter

Salt, white pepper, lemon, garlic, chopped parsley to garnish

Method

Prepare and measure out ingredients as listed above.

Slice onions and mushrooms and fry gently in oil. Add milk, meat stock and Fresubin® 2kcal Fibre DRINK Neutral

Make a roux with butter and flour and add to soup to thicken.

Season to taste and add chopped parsley as garnish.

Pour soup into a blender, then blend until smooth and fully combined.

Add extra water if a thinner consistency is desired.
